Chef Shachi Mehra created this delicious, light and refreshing recipe and it’s become one of her favorite dishes.
4C Ripe watermelon – diced medium
1/4 C Red onion – sliced very thinly
1 small Fennel bulb – shaved (white part only)
2 T Lime juice
2 T Mint – chiffonade
2 T Cilantro – chiffonade
1 t Chaat masala **
- In a large bowl, mix together lime juice, mint, cilantro, chaat masala and sugar. Taste and adjust seasoning if necessary.
- Toss with watermelon, fennel and red onion. Serve chilled.
- **Chaat masala is a popular Indian spice blend of about 13 different spices including dry mango, cumin and black salt. This tangy, slightly spicy blend is primarily used over raw fruit and vegetables and as a finishing spice.
