The all-American restaurant is opening early on the weekends and putting twists on classic dishes like Bread Pudding French Toast with a blueberry compote and a whiskey créme anglaise; Chilaquiles featuring ranchero tortilla chips, two eggs, feta, and sour cream, purple onions, avocado, and pico de gallo; and mouthwatering Fried Chicken and Sweet Corn Bread, topped with whipped salted butter, jalapeño-infused maple glaze, and bacon. For some lighter brunch options, dive into Eureka!’s take on Avocado Toast topped with a hardboiled egg, diced tomatoes, watermelon radish, and chimichurri; or 6 Pack Breakfast Burrito with eggs, ground turkey, black beans, pepper trio, avocado, and served alongside charred tomato salsa; for an original breakfast dish, enjoy the Classic Breakfast served with two eggs, house potatoes, baguette, and a choice of bacon or sausage. Don’t forget, brunch without booze is just breakfast, so pair all of these delicious menu items with the new weekend cocktails, Weekend Thyme (gin, aquavit, carrot, ginger, thyme, and lemon), Do You Even Juice Bro (tequila, tomatillo, tomato, cucumber, and horseradish), or enjoy a $5 Bloody Mary or Mimosa.
