Lime Goat Cheese Berry Tart


Ingredients for Crust:

1/2 C          Almonds

1/2 t           Cinnamon

1 Pinch        Salt

1 C             Dates – pitted


Ingredients for filling:

5.5 oz         Goat cheese

1/4 C          Confectioners’ sugar

1 C             Greek yogurt

1 T              Lime juice

1 t               Lime zest

1 T              Honey

1 C              Berries


  1. Method for pie crust:
  2. 1. Place almonds and cinnamon in food processor and pulse until the mixture resembles coarse meal.
  3. 2. Add the dates and process until the mixture comes together into a dough.
  4. 3. Divide the dough into 2 equal pieces and press evenly into greased 4″ tart pans.
  5. 4. Bake for 12 minutes at 350ºF.
  6. 5. Remove tart
  7. Method for filling: 1. Sift sugar to remove any lumps.
  8. 2. In a stand mixer beat the goat cheese and the sugar until light on medium high speed.
  9. 3. Incorporate yogurt on slow speed and then beat on medium high speed.
  10. 4. Incorporate lime juice, lime zest and honey on slow speed.
  11. Method:
  12. 1. Pour filling mix into tart shells & refrigerate until firm.
  13. 2. Cover with berries of choice.
