Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

The Latin American Brunch series continues to Colombia on April 23, Mexico on May 7, El Salvador on June 25, Brazil on July 23, Chile on August 20, Venezuela on September 17, Guatemala on October 29, Peru on November 19, and Nicaragua on December 17. The Latin American Brunch series’ first two stops were Cuba in January and Argentina in February.
For March, Executive Chef Victor Juarez has prepared a culinary tour stop in Costa Rica that begins with sensational Soups and Salads featuring Sopa de Pata, a vegetable beef stew, Salpicon, Simple Beet Salad, Hearts of Palm Salad Caesar Salad, Butternut Squash and Sweet Potato Salad; along with domestic and imported cheeses, sliced fresh fruits, shrimp cocktail, ahi tuna, and sea bass ceviche.
Costa Rica Arepas and Tamales specialties include Tamales, Caramelized Sweet Plantains, Caramel Rum Glaze, Pasteles Fritos, Cabbage Escabeche, Black Beans Casserole and Crema Fresca.
Traditional Costa Rica entrees include a choice of Casado with grilled steak, fried eggs, fried plantain, cabbage salad, refried beans and rice; Chile Relleno with stuffed red bell pepper with a mixture of spices, beef and onion;Bistec Encebollado with sautéed filet mignon, caramelized onions, and gallo pinto-a mixture of rice beans; Pork Tenderloin with Costa Rican Coffee Glaze with steamed white rice, fried yucca, and cabbage escabeche; Arroz con Pollo with sautéed chicken with annatto rice, red bell peppers, onions, tomato and cilantro; Huachinango with pan seared whole snapper, herbed tomato sauce and tomato and cucumber salad; Camarones Entomatado with sautéed shrimp in a tomato sauce, arroz blanco and chayote con queso duro; orBaked Lobster Tail with 10-ounce lobster tail and brown garlic butter.
Delicious Costa Rica desserts feature an assortment of mini breakfast pastries, tres leches cake, arroz con leche, coconut rum flan and caramel sauce; along with assorted mini cakes, vanilla raisin bread pudding, pineapple, and vanilla cream empanadas.
For an additional $10, guests will enjoy endless sparkling wine or mimosas. Complimentary glass of sparkling wine or cider, coffee, decaffeinated coffee, tea, juice or soft drinks will be served.
