Veggie Muffletta is a specialty dish of Chef Jeremy Cantwell at the House of Blues in Anaheim


5 lb      Green olives
6 C       Kalamata olives – pitted
96 oz    Giardiniera
3/4 C    Capers
1 C       Garlic – peeled & minced
1/4 C    Celery – sliced thinly (less than 1/8 inch) Parsley – chopped
8 oz      Parsley
3 T       Oregano
2 T       Crushed red pepper
2 C       Red wine vinegar
1/2 C    Scallions
2 T       Pepper – black, coarse
128 oz  Extra virgin olive oil
6 oz      Roasted peppers – 1/4 inch diced Leidenhiemer’s French bread


  1. Drain and crush the olives, giardiniera and capers
  2. Combine all of the ingredients except the olive oil and let stand for 20 minutes Mix the ingredients again, then add the olive oil and combine
  3. Add to Leidenhiemer’s French bread and enjoy!
