Spinach Avocado Pasta
Spinach avocado pasta is very creamy without using butter or cheese. A very quick recipe indeed.
2 cups pasta
1/4 cup spinach
1 tablespoon olive oil
pepper (and salt – to taste)
2 tablespoons lemon juice
- 1. Boil, cook and drain the pasta
- 2. Heat a tsp. of oil in a small pan and add spinach and garlic. Saute until cooked.
- 3. In a food processor, pulse the spinach, avocado, olive oil, pepper, salt and lemon juice until creamy.
- 4. Stir in mixture with pasta and serve.
