Chef Marco Zapien offers up his family favorite Salsa recipe.


2 oz Olive oil
3 Tomatoes – diced small
1/2 Yellow onion – diced small
1 Green bell pepper – diced small
1 Chipotle pepper – chopped finely
1 Clove garlic – minced
1/4 C Cilantro – chopped
1/2 C Chicken stock
Salt and Pepper to taste


  1. In a sauté pan, heat the olive oil. Add the garlic, tomatoes, onion, bell pepper and chipotle
  2. pepper.
  3. Cook until vegetables are tender.
  4. Add chicken stock and chopped cilantro.
  5. Reduce heat and simmer until veggies break down and reach a salsa consistency.
