A very simple, elegant appetizer made with Malibu Olive Company’s special reserve extra virgin olive oil.


1    French or Italian bread loafcrispy
5-6 Tomatocut into thin wedges, deseeded
1    Garlic clove
1 T Malibu Olive Company Special Reserve Extra Virgin Olive Oil
      Arugula leaves small, rinsed, dried well
      Salt and pepper to taste

  1. Toast the bread on each side then drizzle a small amount of olive oil on one side.
  3. Lightly rub the side of the toasted bread with the olive oil with the fresh garlic clove.
  5. Arrange the tomatoes, with a few small pieces of the sun-dried tomatoes.
  7. Top with one or two arugula leaves.
