A very simple, elegant appetizer made with Malibu Olive Company’s special reserve extra virgin olive oil.
1 French or Italian bread loaf – crispy
5-6 Tomato – cut into thin wedges, deseeded
1 Garlic clove
1 T Malibu Olive Company Special Reserve Extra Virgin Olive Oil
Tomato – sun-dried
Arugula leaves – small, rinsed, dried well
Salt and pepper – to taste

- Toast the bread on each side then drizzle a small amount of olive oil on one side.
- Lightly rub the side of the toasted bread with the olive oil with the fresh garlic clove.
- Arrange the tomatoes, with a few small pieces of the sun-dried tomatoes.
- Top with one or two arugula leaves.
