1 1/2 C Jasmine rice
1 1/2 C Light canned coconut milk
1/2 C Coconut water
1/4 t Salt
1 1/2 T Coconut oil
2 T Unsweetened coconut – finely shredded


  1. Step 1: Heat saucepan over medium-high heat
  2. Step 2: Add rice, coconut milk, coconut water, and salt to pan. Stir and bring to a boil
  3. Step 2: Reduce heat to low, cover for 30 minutes, until liquid is absorbed
  4. Step 3: Fluff with a fork, stir in coconut oil
  5. Step 4: Stir in the shredded coconut, serve
