TORTILLA REPUBLIC LAGUNA BEACH TO HOST MONTHLY SPIRITED DINNER SERIES, KICKING OFF WITH UNION MEZCAL AND FERIA DE JALISCO TEQUILA ON JANUARY 21, 2015

The modern Mexican restaurant welcomes guests to learn and sample different spirits each month while enjoying a prix fixe dinner set on the California Riviera

WHAT: Tortilla Republic Laguna Beach, the refined Mexican eatery boasting scenic ocean views, invites diners to explore premium spirits complemented by a customized chef’s tasting menu that showcases bold flavors and farm-fresh ingredients. This monthly event will kick off in 2015, with the first in the series taking place on Wednesday, January 21, 2015, featuring Union Mezcal and Feria De Jalisco Tequila paired alongside a $59 five-course menu (pricing will vary based on night/dinner reserved). The series is designed to give diners an opportunity to sample and learn about different tasting techniques, while indulging in menu items exclusively created for each event. Consulting Chef Cathy Shyne, Executive Chef Chris Tzorin, and Pastry Chef Katie Shyne will collaborate on the preset menu and speak to guests, while representatives Moises Rivera of Feria De Jalisco Tequila and Nicholas Potocic of Union Mezcal will talk about the history and flavor profiles behind each brand as well as stop by each table answering any questions. The next dinner in February will focus on organic wines of California from The Organic Cellar paired with modern Mexican dishes. Other upcoming dinners in the series will feature spirits from the regions of Mexico and Latin America.

Bocadito

Spicy cucumber mint and citrus bite spiked with tequila, and crispy tortilla strips

Spanish Chorizo Clams

Smoked paprika, fennel, and pino ranchero herb sauce with asiago toast

Achiote Salmon

Red cauliflower puree, chipotle peach chutney, and blood orange beurre blanc

Chateaubriand Steak

Whipped purple potatoes, chimichurri,parmesan stuffed tomato, ancho chile, and Cabernet reduction

Warm Strawberry Short Cake

Strawberry crema infused with rose bubbly
