Fuego’s Christmas menu offers a special three-course, prix fixe Christmas Eve Dinner and Christmas Day Dinner at Hotel Maya on Tuesday, December 24 from 5-9 p.m. and Wednesday, December 25 from 12-9 p.m.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

“Christmas in Fuego provides traditional holiday spirit with a terrific three-course dinner, festive lighting gracing the waterfront and our unique oversized fire pit on the patio,” said Jason Cervantes, Director of Restaurants at Hotel Maya – a DoubleTree by Hilton. “Our hope is to make Fuego a joyous experience for our guests, families, and employees during the holidays.”

Executive Chef Victor Juarez’s Christmas Eve Dinner and Christmas Day Dinner begins with a choice of Lobster Corn Chowder with cilantro mojo, kaffir lime, huitlacoche, and chili oil; Short Rib Tamales with stone-ground masa, guajillo sofrito, chanterelle mushrooms, and cashew crema; Maldon Sea Salt Roasted Golden Beets with frisée, feta-crème fraîche candied walnuts and white balsamic; or Jumbo Sea Scallops with mole vinaigrette, mashed acorn squash, and almond sumac.

Christmas Dinner Entrées include a selection of Oxtail & Duck with peppercorn mole Blanco, heirloom potatoes, caramelized fig, and micro assorted vegetables; Tenderloin of Beef with whiskey peppercorn Brussels sprouts, blue cheese and Peruvian purple potato purée; Turkey Mole with plantain and brioche stuffing, mole poblano, and corn potato purée; Lubina Verde with pan-roasted Chilean sea bass, Manila clams, calamari, chorizo, and green curry butter; or GF/V Sofrito Quinotto with cauliflower, chanterelle mushrooms, wilted arugula, citrus zest, almond sumac, and scallions.

Fuego’s Christmas desserts include the choice of Pumpkin Mousse Cheesecake with kumquat marmalade and fresh blackberries; or Christmas Yule Log with vanilla toll sheet cake, chocolate buttercream, and frosting.

Christmas Eve Dinner and Christmas Day Dinner guests will also enjoy complimentary coffee, decaffeinated coffee, and tea.
