Electric City Butcher is excited to offer its most requested class, Pork 101. This hands-on overview will teach you how we source our animals, how you identify the different parts of the pig, the basics of breaking it down, and how to prepare your favorite cuts. We’ll review knife skills, seam butchery, and you’ll get to participate in butchering a half pig. By the end of the night, you’ll see how ECB processes these beautiful Devil’s Gulch animals for the case–and for a special surprise–you’ll also witness the making of one of our delicious charcuterie items.
At the end of the evening, each student takes home a Butcher Bag, including your own boning knife, trussing string, and a 10% off coupon for a later visit. You also take home 4 lbs. of our delicious Devil’s Gulch pork, and get 10% off any other purchases in the shop. Light food and refreshments served afterward.
