Dishes include Sushi Grade Yellow Fin Tuna Tartare with avocado and serrano sorbet, charred pickled red onion, dehydrated garlic and yuzu; Cold-Smoked Diver Scallop with fennel apple puree, pickled strawberry, jalapeño powder and pistachio crumble; Rosewood American Wagyu Filet Mignon with pommes lyonnaise, roasted nantes carrots and bordelaise sauce; and Fair Hills Fuji Apple Tart with salted caramel, vanilla bean sweet cream and cinnamon gelato.
