Students will learn about the history of spices, the difference between herbs, spices, and seasoning, and how to grow herbs for the best flavor. Students will learn when to use fresh vs. dry spices, including how to store. Students will learn traditional as well as modern takes on blends and mixes, including pesto, curries, chimichurri, and dry rubs. Live demonstrations include preparation of compound herb butter. Students will toast, grind, and prepare spice blends and assist with preparing the luncheon provided. All equipment will be provided, Hats, aprons, and recipe packets will also be provided.
