Four-Course, Prix Fixe Christmas Eve and Christmas Day Dinners

Fuego celebrates the season with a special four-course, prix fixe Christmas Eve Dinner and Christmas Day Dinner at Hotel Maya on Monday, December 24 from 5-10 p.m. with live music performed from 5-9 p.m. and Tuesday, December 25 from 11 a.m. to 9 p.m. with live music performed from 3-7 p.m.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

“Christmas Dinners in Fuego will have a unique holiday spirit with the live music, specialty drinks and festive lighting gracing the waterfront,” said Jason Cervantes, Director of Restaurants at Hotel Maya – a DoubleTree by Hilton. “We look forward to making Christmas in Fuego a joyous experience for our guests and employees during the holidays.”

Executive Chef Victor Juarez’s Christmas Eve Dinner and Christmas Day Dinner begin with Pumpkin Butternut Soup with candied jalapeño bacon and whipped crème fraîche.

Fuego holiday Salads include the selection of Heirloom Apple and Candied Walnut Salad with baby greens, dried cherries, roasted acorn, panela cheese and zinfandel citrus vinaigrette; or Ember Charred Beets with little gems, heirloom beets, whipped goat cheese, roasted corn and walnut vinaigrette.

Christmas Dinner Entrées include a choice of Filet Mignon with whiskey peppercorn Brussels sprouts, blue cheese and Dungeness crab potato purée; Mary’s Farm Roast Turkey with shallot and sage pan gravy, brioche mushroom dressing, orange cranberry compote, blue lake beans and Yukon gold potato purée; “Pot Roast Style” Short Rib with Brazilian braised “Prime Cut” short ribs, juniper berry port glaze, brown beech mushrooms, charred rapini and truffle potato purée; or Chilean Sea Bass with fried sage butter sauce, blistered tomatoes, spinach and fingerling potatoes.

Fuego’s Christmas desserts include the selection of Apple Pumpkin Cheesecake with cinnamon orange cream and Tahitian vanilla sauce or Chocolate Trio with bittersweet chocolate, milk chocolate and white chocolate topped with ganache icing and drizzled with raspberry sauce.

Christmas Eve Dinner and Christmas Day Dinner guests will also enjoy complimentary coffee, decaffeinated coffee and tea.
