Summer is in full swing at Glasspar in Dana Point. The modern American seafood hall celebrates the season with summertime additions to Chef Rob Wilson’s menus and cocktail program. Glasspar will also host an evening of unfernettable fun celebrating the inimitable Fernet Branca.
On Wednesday, July 13, Glasspar kicks off summer with a celebration of everyone’s favorite aromatic spirit – Fernet. Held in Glasspar’s Private Dining Room from 5:30 p.m. – 7:30 p.m., the evening will explore four Fernet cocktails paired with a lively selection of thoughtfully created bites. The special cocktails celebrate and play up the unique flavor profiles of Fernet.

Glasspar has also introduced new seasonal dishes, including Starters like Fresh Mexican Bay Scallop Aguachile Verde dusted with chile lime corn nut powder and Steamed Little Neck Clams with Spanish chorizo. Entrees include a classic Lobster Roll on a toasted Brioche bun, Day Boat Scallops with King Trumpet Mushrooms, and a truffle-pea puree, and a 16oz Grilled Duroc Tomahawk Porkchop atop a white cheddar polenta with baby green beans and stone fruit gastrique. When available, Chef Rob sources locally caught seafood including uni from Santa Barbara and line-caught Swordfish from the Avalon Trench off the coast of Catalina.

Marlinspike – Tito’s Handmade Vodka, Amaro Nonino, Giffard Abricot du Roussillon
Paradise Found – Tito’s Handmade Vodka, Grand Marnier, cranberry, lime, orange bitters
Aquadisiac – The Botanist Gin, lime, geranium syrup, cucumber juice
Smoke on the Water – Xicaru Silver Mezcal, pineapple, lemon, Liquor 43
Knot On Call – Diplomatico Rum, Amaro Nonino, Carpano Antica, orange bitters
Lost at Sea – Michter’s Bourbon, Flor De Cana 7-Year Aged Rum, lemon, meringue
Rambling Sailor – Mint-infused Woodford Bourbon, blackberry, lemon
