Two Santa Monica legends, one Ocean Avenue address. Earlier this summer, Chef Raphael Lunetta (JiRaffe) stepped up through the storied Veranda and into the kitchen of The Georgian Hotel as its new consulting chef. The Santa Monica native’s mission was to modernize the historic property’s culinary program – but more than that – compose a dining atmosphere to manifest the Santa Monica experience. Months later, the product is a vibrant coastal-Californian take on breakfast, lunch, and dinner – perhaps best epitomized through a variety of shared plates and fresh ingredients. By incorporating seasonality, some signature Lunetta favorites, and subtle yet impactful techniques (such as house-made vinaigrettes), the iconic Georgian Hotel can add dining destination to its 83-years young repertoire.
