Chef Perez is experienced in managing high-volume kitchens, after serving as Senior Corporate Chef of the popular Umami Restaurant Group, Chef at Watertable at the Hyatt Hotel HB, and Executive Chef and Sustainability Expert at TS Restaurants (Duke’s) 
of Hawaii and California.
