Chef Marc Johnson

Chef Marc Johnson is a Southern California native. His love of cooking was passed down to him by his father, and has remained a constant throughout the rest of his life no matter what else he is doing. Even while training as a sculptor, his college days were also spent selling his trademark breakfast burritos out of his apartment. These burritos provided his first taste of the restaurant business, starting him on a path that has taken him through Le Cordon Blue in Pasadena, Mastro’s Ocean Club and now to establishing Oak Grill.

Crucial to Marc’s training as a Chef is his experience working with acclaimed Chef James Boyce. The two met while working at Studio in the Montage Resort, and Marc followed him to Huntsville Alabama where James opened his own restaurant, Cotton Row. Marc’s time there taught him the value of fresh, local, seasonal ingredients, something he’s made a key part of the Oak Grill at the Fashion Island Hotel menu.

In August of 2016, Chef Marc departed Oak Grill and the Fashion Island Hotel and became the Corporate Executive Chef for Red O, where he oversees all the locations from L.A. to La Jolla, with future locations opening in Miami and New York.
