Chef Jason Montelibano: Offering a simple range of American classics with a gastro pub-inspired approach to each dish, the menu at Eats Kitchen & Bar was devised by locally known Chef Jason Montelibano. Taking the lead in the kitchen as opening chef after nearly four years at Chapter One in downtown Santa Ana, Chef Jason brings his own flair and twist to the menu in Eats. He’s serving up some of own creations like classics like Pork Belly Buns topped with homemade kimchi, Fried Chicken and Biscuits dipped in Sriracha butter and served with country gravy, Fish and Chips created with a delicate batter made from a rotating selection of local craft beers, and mouth-watering burgers like the Craft Burger made from scratch and topped with house-smoked bacon and IPA cheese sauce. He also maintains menu favorites that are Classics like the Cobb Salad, Mac & Cheese and a variety of Flat Breads.
