Chef Abel Vargas previously ran West Coast Fish in Costa Mesa.
In July 2018, he became chef of the restaurant and bar Mesa, in Costa Mesa. He redesigned the menu and brought his own moods and ideas into the concept.
Since the age of 15, Chef Abel Vargas has known food would be his future. He shared about Mesa’s menu that “Every dish on the menu was created on a different day, and was based on what I was feeling at that moment.”
