BRICK Restaurant, an award-winning Italian eatery located in the heart of downtown San Clemente has undergone a revamp. Executive Chef/Owner David Pratt has fitted his kitchen with an 8-foot Santa Maria grill, featuring back-to-basics cooking alongside its eponymous brick oven that has been at the core of Chef Pratt’s repertoire since opening in 2012.
BRICK’s genuine farm-to-table philosophy means working with local farms and purveyors to promote sustainability and seasonality. The finest produce is sourced locally at weekly Farmers’ Markets, and personally hand-selected by our chefs. At BRICK, whole animals – be it a lamb, or pig – are broken down on-site, and every ounce is incorporated into a variety of hand-crafted dishes for guests to feast on. Currently on the menu are gorgeous rib eye steaks, hangar steaks, lamb chops, pork belly, as well as fish and lobster, all executed to perfection on the impressive new grill.
The concept of delivering high quality, local and sustainable ingredients remain true to Chef Pratt’s unique and seasonal cuisine. Hand-selected local and international wine selections are on hand to complete your rustic dining experience. At Brick, guests are invited into a warm, at-home atmosphere, with Chef Pratt readily visible in the open kitchen during every service.
