Such an expansive, modern design could not be implemented without the expertise of Saint Marc’s highly acclaimed staff, led by company CEO, Thomas (Mac) McFarland Gregory III, and vice president of culinary & operations, Frank Mathew Belosic III. Gregory is a master mixologist, certified advanced sommelier, beverage consultant, and top executive in the international food and beverage community with 25 years of experience developing, launching, and managing hundreds of locations for the world’s most elite luxury hospitality brands. Belosic, responsible for overseeing Saint Marc’s launch, is a master chef with more than 20 years of industry experience. He has opened and managed a wide range of food and beverage operations for Five Star and Five Diamond restaurants and hotels throughout the U.S. and has earned a reputation for inventiveness as well as a dedication to using fresh and local products.
