Manhattan Beach’s Chez Soi a Modern Cafe, which recently opened at Metlox Plaza with chef-owner Mark Gold, formerly of Eva, at the kitchen helm, announces that it has hired L.A. mix master Shane Croughan as its house mixologist and bar manager.
Melding the art and science of mixology with fine artisan spirits, freshest seasonal ingredients and current pre- and post-Prohibition cocktail trends, Croughan, a protege of award-winning mix master Julian Cox, is also well-known within Los Angeles’ trendy cocktail and lounge scenes. For the past three years before coming to Chez Soi, as lead bartender at Picca, Croughan refined his molecular mixology skills, creating hand-crafted Peruvian-inspired cocktails from his own house-made grenadine, ginger, anise, rhubarb and other syrups. Developing his expertise on Italian liqueurs and spirits while at Sotto, he became known for designing hand-crafted Italian-inspired cocktails from small batch artisanal spirits and other fine ingredients.
