Sauce1 small garlic clove, minced3 Tbsp. water2 Tbsp. pineapple juice1 Tbsp. light brown sugar2 tsp. apple cider vinegar2 tsp. ketchup2 tsp. soy sauce1 tsp. cornstarch1 tsp. ground fresh gingerStir Fry2 Tbsp. olive oil6 button mushrooms, thinly sliced1 carrot, thinly sliced diagonally½ red bell pepper, thinly sliced½ jalapeño pepper, seeded and thinly sliced2 green onions, cut into 2-inch pieces8 oz. tofu fettuccine, rinsed well¼ cup pineapple, choppedBlack sesame seeds, for garnish


  1. Sauce
  2. • Step 1: Whisk together all ingredients until smooth, set aside
  3. Stir-Fry
  4. • Step 1: Heat oil over medium-high heat in wok
  5. • Step 2: Add mushrooms, carrot, red pepper, and jalapeño. Cook 3 to 4 minutes until tender-crisp
  6. • Step 3: Add onions, fettuccine, pineapple, and sweet & sour sauce. Bring to boil, then reduce heat to medium
  7. • Step 4: Cook 2 minutes or until sauce thickens and noodles are warmed through. Garnish with sesame seeds
