FRIED CHICKEN40 lbs chicken sliced into 6 oz portionsMarinated in 3/4 gallon of buttermilk1 cup of our secret “Burnt Spice” mixChicken is then deep fried, after being battered in a mixture of flour/spice mix.HONEY SRIRACHA5 lbs of locally sourced honey*1 bottle of sriracha1 spoon of crushed pink peppercornsGravy3 lbs butter3 lbs flour3 spoons of cracked black pepper3 gallons of milk3 spoons of garlic powder3 spoons of onion powder3 spoons of chicken base4 oz of tobascoSalt to tasteBISCUIT6.5 lb flour3 lbs butter5 oz salt7.5 oz baking powder3/4 gallon of buttermilk1 egg for egg washGARLIC MASHED POTATOES1.5 lbs of peel potatoes1 lb of butter1/4 gallon of heavy cream1 spoon of garlic powder1 teaspoon of white pepperSalt to taste
- FRIED CHICKEN
- Chicken is then deep fried, after being battered in a mixture of flour/spice mix.
- Roll out, punch out, egg wash, bake for 12 mins. Rotate, bake for 5 more minutes.
- GARLIC MASHED POTATOES
- Boil potatoes, drain them and run through a ricer.
- Gradually add heavy cream/butter mixture and fold until reached desired consistency.
- Add salt to taste.
