Chef Marco Zapien offers up his family favorite Salsa recipe.
2 oz Olive oil3 Tomatoes – diced small1/2 Yellow onion – diced small1 Green bell pepper – diced small1 Chipotle pepper – chopped finely1 Clove garlic – minced1/4 C Cilantro – chopped1/2 C Chicken stockSalt and Pepper to taste
- In a sauté pan, heat the olive oil. Add the garlic, tomatoes, onion, bell pepper and chipotle
- Cook until vegetables are tender.
- Add chicken stock and chopped cilantro.
- Reduce heat and simmer until veggies break down and reach a salsa consistency.
