- 1 C Sugar
- 2/3 C Heavy cream
- 2 C Half and half
- 6 Egg yolks
- 1 t Vanilla extract (best with Mexican vanilla)
- 2/3 C Extra virgin olive oil
- Place sugar, cream and half and half in a medium size heavy gauge saucepan over medium high heat. Bring mixture to a simmer.
- Place eggs in a medium size bowl, beat well. Slowly add approximately 1 cup of the hot mixture to the egg yolks while whisking vigorously. Slowly add the egg mixture back to the milk mixture in the saucepan. Bring the mixture back up to a boil before reducing heat to keep at a simmer
