Jasmine Rice

Ingredients:
- 1 1/2 C Jasmine rice
- 1 1/2 C Light canned coconut milk
- 1/2 C Coconut water
- 1/4 t Salt
- 1 1/2 T Coconut oil
- 2 T Unsweetened coconut – finely shredded
Directions:
- Step 1: Heat saucepan over medium-high heat
- Step 2: Add rice, coconut milk, coconut water, and salt to pan. Stir and bring to a boil
- Step 2: Reduce heat to low, cover for 30 minutes, until liquid is absorbed
- Step 3: Fluff with a fork, stir in coconut oil
- Step 4: Stir in the shredded coconut, serve
