Ingredients:

For Bechamel Sauce:3 CUPS WHOLE MILK1 SMALL ONION HALVED2 BAY LEAVES1/4 TEASPOON WHOLE BLACK PEPPERCORNS2 CLOVESPINCH NUTMEG2 OZ UNSALTED BUTTER2 OZ FLOURFor Mac:1/2 POUND ELBOW MACARONI COOKED3.3 OZ ASIAGO CHEESE3.3 OZ PARMESAN3.4 OZ MOZZARELLA3 OZ BLANCHED BROCCOLI FLORETS2 OZ RAW ZUCCHINI SLICED 1/4 INCH HALF MOONS2 OZ THIN SLICED CARROTS IN HALF MOON1.5 OZ SAUTEED MUSHROOMS2 TEASPOONS KOSHER SALTPINCH OF BLACK PEPPERFor Bread Crumb Topping:3/4 CUP PANKO BREAD CRUMBS2 TABLESPOONS CHOPPED PARSLEY1 SMALL GARLIC CLOVE MINCED2 TABLESPOONS OLIVE OILPINCH OF SALT AND WHITE PEPPER

Directions:

  1. For Bechamel Sauce:
  2. IN A MEDIUM SAUCEPAN BRING MILK TO A SIMMER ADDING THE ONION, BAY
  3. LEAVES, PEPPERCORNS, CLOVES, AND NUTMEG. STIR FREQUENTLY TO PREVENT
  4. BOILING OVER. LET THE MILK STEEP FOR 20 MINUTES. STRAIN THE MILK AND
  5. DISCARD THE SOLIDS. IN ANOTHER SAUCE PAN MELT THE BUTTER THEN ADD
  6. THE FLOUR STIRRING CONSTANTLY FOR ABOUT A MINUTE. WHEN THE MIXTURE
  7. IS SLIGHTLY BEIGE AND BUBBLY, INCREASE THE HEAT AND WISK IN THE
  8. STRAINED MILK. BRING TO A BOIL, WISKING FREQUENTLY. REDUCE HEAT TO A

  10. For Mac:
  11. IN A LARGE SAUCEPAN HEAT 1 TABLESPOON OF OLIVE OIL. WHEN HOT ADD
  12. THE BROCCOLI, ZUCCHINI, CARROTS AND SAUTE FOR 1 MINUTE. ADD THE
  13. MUSHROOMS AND HEAT FOR ANOTHER 30 SECONDS. THEN ADD YOUR
  14. RESERVED BECHAMEL, PASTA, GARLIC, SALT AND BLACK PEPPER. STIR
  15. FREQUENTLY WHILE HEATING INGREDIENTS. WHEN HEATED TURN OFF THE
  16. HEAT AND FOLD IN CHEESE RESERVING ABOUT 2 OZ FOR THE TOP.
  17. For Bread Crumb Topping:
  18. IN A GREASED 13 x 9 INCH BAKING PAN POUR THE MACARONI MIXTURE AND TOP
  19. WITH THE REMAINING CHEESE AND BREADCRUMB TOPPING. BAKE FOR 25 TO
  20. 30 TILL THE TOP IS BROWNED AND BUBBLY. ALLOW TO SIT ABOUT 5 MINUTES
  21. THEN SERVE.
