Chilled English Pea Soup

An easy to make, cold soup

Ingredients:

  • 1 package frozen peas
  • 2 shallots, sliced
  • 5 garlic cloves
  • 3-4 cups vegetable stock
  • 1t lemon juice
  • Pinch salt

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Cook the peas in the water until very tender.
  3. Once the peas are soft, put them in a blender with the rest of the ingredients.
  4. Blend until very smooth.
  5. Serve chilled.
