Tomato Confit – One of my favorite all time summer condiments for seafood
Tomato Confit taste great. From dinner recipes, budget menus and healthy diet selections, you’ll easily find any recipe you need.
1 pint Grape or cherry tomatoes1 T Thyme – chopped1/2 C Olive oil2 t Sea salt1/2 t Black pepper2 Shallots – sliced thin4 Garlic cloves – sliced thin
- Toss all items together.
- Roast in 350 degree oven for half an hour covered and half an hour uncovered.
- Drain off excess juices and olive oil and use for an amazing salad dressing.
- Chill tomato confit and serve in many different ways.
