Banana Muffin French Toast

Ingredients:

  • Banana Muffin:
  • 6 Eggs
  • 6 fl oz Sour Cream
  • 12 fl oz Butter – melted
  • 4 Bananas – over ripe & mashed
  • 2 C Brown Sugar
  • 1/2 C Granulated Sugar
  • 2 t Vanilla Paste
  • 4 C AP Flour
  • 4 t Baking Powder
  • 1 t Baking Soda
  • 2 t Cinnamon – ground
  • 2 t Ginger – ground
  • 1 t Sea Salt
  • Custard Soak:
  • 6 Eggs
  • 1/2 C Granulated sugar
  • 1/4 t Vanilla paste
  • 1/4 t Cinnamon – ground
  • 2 C Manufacturing cream

Directions:

  1. Beat eggs through butter.
  2. Mix in bananas, sugars, and vanilla paste.
  3. In separate bowl mix flour through salt.
  4. Fold flour mixture into banana mixture until just combined.
  5. Fill 4” brioche cups ½ way and bake at 325º until internal temperature of 195º.
  6. To Assemble:
  7. Cut muffins to 1” thick slices.
  8. Soak in custard for 5-10 minutes.
  9. Grease griddle with melted butter.
  10. Add muffin slices, and cook until golden brown.
  11. Flip and finish on griddle.
  12. Garnish with Sweetened Condensed Milk, raspberries, candied pecans, and sliced bananas.
