Huntington Beach’s Newest Hot Spot Pacific Hideaway Taps Casey Lyons as Lead Bartender

Pacific Hideaway announced that Casey Lyons will lead the bar program. Known as one of Southern California’s top bartenders, Lyons brings over 10 years of experience to the new restaurant, where he will oversee bar operations and spearhead the beverage program.

Pacific Hideaway’s cocktail menu will include takes on classics, such as the Kite Surfer—a whiskey sour with a twist—featuring rye whiskey, Aperol, and Amaro Montenegro, mixed with lemon and honey; or the Captain Barbosa, a hickory-smoked rum old-fashioned with savory notes of ancho chile and a hint of cinnamon syrup. In addition to cocktails, the bar will offer some of Southern California’s best craft brews and coastal wines.

Casey comes to Pacific Hideaway from Costa Mesa’s SOCIAL, where he led a gold medal-winning cocktail program. Prior to that, Lyons spent time at Huntington Beach’s 25 Degrees and Culinary Dropout in Scottsdale, where he served as Principal Bartender. It was in Scottsdale where he emerged as a true beverage talent, developing his take on the classic Old Fashioned. Lyons’ previous experience includes serving as a bartender at the Culinary Dropout – The Yard, in downtown Phoenix, where he helped lead the restaurant into Fox Restaurant Concept’s most successful opening at the time.

When he’s not busy crafting premium cocktails and mingling with locals, Casey can be spotted at neighborhood bars or farmers markets, searching for new inspirations. Additionally, Casey enjoys time on the beach with his pup, cheering for U.S. Soccer and enjoying the SoCal lifestyle.

Pacific Hideaway opens May 2017 in the newly refreshed Kimpton Shorebreak Hotel at 500 Pacific Coast Hwy, in the heart of Huntington Beach, Calif.
