Rocco and Nancy Palese opened their first Chicago pizzeria in 1971. Soon after, Rocco came up with his stuffed pizza after tweaking his mother’s recipe for scarciedda, a savory stuffed cake served for Easter. The new recipe became a huge hit for their new business, Nancy’s Pizza, which opened officially in 1974 in Harwood Heights after Rocco changed the name to pay homage to the new pizza creation and his beloved wife Nancy.
