Served at FIG & OLIVE Melrose Place as well as the recently opened Newport Beach location in the heart of the California Riviera, Chef Lorange’s Paella del Mar ($32) is comprised of black tiger shrimp, sea scallops, calamari, mussels and saffron rice with chicken, green peas, red bell pepper, artichoke, saffron aioli, pimento, oregano, and topped with Hojiblanca Olive Oil. Lorange developed his paella recipe while he was living in Tenerife on the Spanish Canary Islands off the coast of western Africa.
