Valentine’s Day guests will enjoy a complimentary glass of champagne or sparkling cider when seated for dinner in the restaurant and romance to the live sounds of a Spanish guitarist from 5:30-9:30 p.m. A variety of champagne specials will be offered throughout the evening.

Hotel Maya will offer “Be Maya Valentine” room package that includes a water view guestroom upgrade, a romantic breakfast in bed for two and a complimentary Fuego bottle of wine upon arrival. The “Be Maya Valentine” room offer is $229 plus tax, per night, valid for two guests in a room and available throughout February by calling 562-435-7676 or online at http://bit.ly/BeMayaValentine.

For Valentine’s Day Dinner, Executive Chef Victor Juarez has prepared a four-course meal that begins with a choice of Silky Lobster Bisque with a splash of Hennessy cognac, Chantilly chive cream, and morsels of lobster meat; or Heirloom Tomato Terrine with vine-ripened tomatoes, Buffalo mozzarella, micro-basil, edged balsamic gastrique and shaved baguette.

A lovely second course is a choice of Wild Hibiscus Flower Salad with edible rose petals, micro green leaves, humbled fogged cheese and Valencia citrus dressing; orJumbo Diver Scallop with pan-seared jumbo scallop, citrus beurre blanc and pea shoots.

The Valentine’s Day Dinner entree includes the choice of Tango de Mar y Tierra with charbroiled beef tenderloin, whisky peppercorn sauce, Maine lobster tail, guajillo béarnaise, truffled potato gnocchi, baby turnips and asparagus spears; Duck Two Ways with sugar cane spiced roasted duck breast, caramelized onion and braised duck, red velvet raspberry sauce and brioche toast; Butter Poached Halibut with heirloom tomatoes, sugar snap peas, grapes and champagne truffle sauce; or Grilled Artichoke Hearts that are marinated in lemon, sea salt, cracked pepper, thyme, olive oil, red lentil hummus, crumbled feta and grilled lavosh.

Fuego’s sweetheart dessert is Cupid’s Chocolate Decadence with lenzer cookie crushed, chocolate mousse and liqueur scented raspberries dipped in chocolate ganache.
