Food Network Seeks Pastry Chef and Artists

Are you a pastry chef, confectioner or cake artist? Do you specialize in sugar pulling, gum paste or fondant? If so, the Food Network wants you! Casting is currently underway for season 2 of “Halloween Wars,” a team competition that challenges chefs to create Halloween-themed displays out of pumpkins, cakes and sugar. The show consists of four episodes. One team is eliminated at the end of each show, and the winning team will take home $50,000. Filming takes place December 7-15 in Los Angeles, and the show will air October 2012.

 "The Secret Ingredient Recipe Cook Off" wine & food pairing. Second in a series of food and wine pairings, co-owner Howard Kotliar shares why this second event features basil. "In addition to it's many health benefits, basil is one of the most delicious herbs and the herb I love most."  The first Secret Ingredient party sold out, so this one is sure to do the same.

  

STEP ONE: Readers submitted an  "Original" Basil  recipe to Recipe@TemeculaNightOut.com for their chance to "Square Off" against each other at the November 19th event.  Entries must be received no later than midnight October 21, 2011.Chef Kelly will choose  two finalists from the email entries.  The finalists will have and benefit from the prepping and preparing expertise of Chef Kelly who will personally train them and their assistants prior to the event.

  

STEP TWO:  On November 19, 2011 at 6 pm the finalists will prepare "appetizer tastings" of their original basil recipe (Each in a Chef Kelly provided kitchen) at Oak Mountain Winery (Temecula Wine Country, Temecula, CA).The appetizers and Oak Mountain Winery wine will  be served to a live audience.  Ticket price is $39 pp..  See the menu below. A panel of 3 impartial judges will choose the winner.

 

STEP THREE: During the event Chef Kelly will prepare and serve her

own "Basil Masterpieces" and an exquisite dessert to the audience. Oak Mountain's owners will be on hand to share their wine paring tips for these fabulous recipes

TOMMY BAHAMA ANNOUNCES THE $50,000 NATIONWIDE SEARCH TO DISCOVER THE WORLD’S FIRST TOMMY BAHAMA RUMOLOGIST

Tommy Bahama is excited to announce the search for the first-ever Tommy Bahama Rumologist™. The search will launch on July 28, 2011. Tommy Bahama is scouring the country via a distinctive social media campaign seeking to find the person most worthy of this new title. “A Rumologist is a person with a vast knowledge of all things related to rum – one that can pour, educate, mix and create island-inspired cocktails for Tommy Bahama,” explains Rob Goldberg, Senior Vice President of Marketing and Restaurants for Tommy Bahama. “The person we are looking for must embody everything that a Tommy Bahama Rumologist should be about,” adds Goldberg. “They must not only love to c reate cocktails and put new twists on old recipes, but he or she must be so passionate about rum, that this person alone could claim this new title.”

As with most titles, this one comes with some great perks: A $50,000 Grand Prize; life-long bragging rights for being the first person to be proclaimed the Tommy Bahama Rumologist; a Tommy Bahama wardrobe and the Rumologist will become Tommy Bahama’s chief rum consultant and rum ambassador for the next year. Additionally, the Rumologist will help to create tantalizing new cocktails and rum-inspired menus for the world to enjoy at each Tommy Bahama Restaurant & Bar location.

When chosen, the Rumologist may travel to locations in Southern California, Las Vegas, Hawaii, Florida, New York and beyond. He or she will work closely with the Tommy Bahama culinary team to develop the most distinctive, handcrafted rum drinks to pair with Tommy Bahama’s island-inspired culinary creations. To enter the search, Tommy Bahama is looking for established bartenders, mixologists and anyone that believes they have what it takes to hold and honor the title. All participants will be asked to create a short video (45-60 seconds max) declaring their candidacy and explain why they should be chosen to be the Rumologist. The expert team on-hand at Tommy Bahama will view all applications and announce a winner on/or around October 6, 2011. The search will take place on the Tommy Bahama Facebook page.

USA Pears Third Annual Culinary Student Recipe Competition Winners

Three U.S. culinary students created recipes using fresh USA Pears earning them a trip to Portland, Oregon to prepare their dishes for a panel of judges. Chosen from over 100 student entries from around the country, the top three students recently competed American Idol style at Portland’s Le Cordon Bleu with an appetizer, an entrée, and a breakfast recipe featuring fresh USA Pears.

Student Charles O’Neill of the Culinary Institute of America, Hyde Park campus, took top honors from the judges to win a scholarship prize of $2,500, as well as the People’s Choice award from the audience, with his “Pomegranate Pear French Toast.” It may have been just the right balance of flavors and texture with the Challah bread stuffed with cream cheese and pears poached in pomegranate juice that convinced the judges and the audience; or perhaps it was the jug of real maple syrup Charles carried from his home in Massachusetts.

Student Jacqui Wou of Santa Barbara City College in California earned the second place prize of a $1,000 scholarship for her sweet and savory “Perfectly ‘Peared’ Lamb,” a multi-faceted entrée with Chianti-poached pears, seared lamb, potatoes “Anna” and a sauce with figs, Meyer lemon and tart cherries.

Student Michelle Soto of Le Cordon Bleu in Portland was awarded a $500 scholarship for her Northwest-inspired “Savory Pear and Basil Mini Cheesecake” appetizer layered with a pear onion marmalade, a filling of three cheeses, and a hazelnut crust.

All entries were awarded points in the following categories: prominent use of fresh pears, originality, creativity, appearance, texture and taste.  Each of the three finalists prepared their dishes and presented them to the panel of judges,  Mary Petersen, President of the Center for the Advancement of Foodservice Education; Chef David Anderson of Genoa in Portland; and Chef DJ Wendeborn, Lead Chef Instructor at Le Cordon Bleu. The judges scored each dish and gave comments to the students, in an American Idol-style event.

Each of the finalists’ schools, along with host school, Le Cordon Bleu, received a donation to their respective scholarship funds from the Pear Bureau Northwest.

USA Rice, Dow AgroSciences Team Up on Rice Month Scholarships; $8,500 in Awards Available

USA Rice Federation is conducting a National Rice Month scholarship contest, sponsored by Dow AgroSciences. High school seniors in the 2011-12 school year from Arkansas, California, Louisiana, Mississippi, Missouri, and Texas are eligible to apply.

To qualify to win a National Rice Month scholarship, students must conduct a promotion activity in their local community during September with U.S.-grown rice as the central theme. Entries must provide details of the promotion and should be submitted by Oct. 14.

Three scholarship prizes totaling $8,500 are available. The grand prize is a $4,000 scholarship and a trip to the 2011 USA Rice Outlook Conference in Austin, Texas, for the scholarship presentation. The second-place winner will receive $3,000 and third-place, $1,500.
