Hapa J’s Spam Sliders

Spam SlidersSpam sliders Truffle Aioli Spam sliders (Yields: about 1 pint 4 ounces) 10 cloves garlic 1/8 teaspoon salt 3 egg yolks 1-2 tablespoons of lemon juice 8 ounces olive oil 8 ounces white truffle oil Blend the first four ingredients or puree in food processor. Add oils in a slow stream and continue to blend until the mixture has formed a thick emulsion. To serve (1 serving) 1/4 onion, sliced 3 slices grilled Spam 3 Hawaiian sweet rolls, sliced Grill onion until crispy and caramelized. Grill Spam on flat top until brown on both sides. Spread truffle aioli on sweet rolls, add onions, Spam and serve. The cool thing about this dish is that you are combining ingredients on both ends of the spectrum: Spam and truffles.
