On Wednesday, August 5th 2015 Executive Chef Ted Hopson and Beverage Director Ann-Marie Verdi opened their doors to welcome Studio City locals and destination diners to The Bellwether. Guests can now enjoy a new go-to spot where extraordinary food is the norm, the drinks are expertly and easily made, and the air of creativity throughout the restaurant keeps diners coming back for more.
“Our years of combined industry experience have impacted every decision we have made throughout this process and seeing our ideas turn into reality has been incredibly rewarding,” said Hopson. “We focused on creating the type of experience we would want as guests, and we couldn’t be more excited to be able to share that with everyone soon!”
The market-driven menu from Executive Chef/Owner Ted Hopson (formerly of Father’s Office and Lukshon) will keep guests on their toes with innovative twists on classic dishes that will draw both Valley locals and city dwellers who are now willing to hop over the hill. The family-style menu is designed to guide diners through a satisfying progression which begins with lighter flavors like the Hamachi Crudo with avocado and pickled baby vegetables accompanied by the unexpected crunch of puffed quinoa or the Roasted Carrots paired with chamomile carrot jus, carrot top salad, and hazelnuts. Moving towards more boldly flavored dishes, guests can enjoy a Mediterranean-inspired Charred Octopus served with tabbouleh, preserved lemon, tangy Greek yogurt, and green olives or dive into the menu’s meat section with the Crispy Pork and Scotch Rillettes served atop potato rosti with ham hock gravy, sunny egg, and pig ear. More adventurous diners can seek out the aptly titled R&D section of the menu, which will offer drink and dish options that allow both Hopson and Verdi to test out new items while capitalizing on the incredible access Los Angeles has to hyper-seasonal produce.
