For the Chos, who began their culinary career nearly a decade ago at a sushi restaurant that formerly occupied their existing space, there is an unspoken commitment to give guests the highest quality fish and ingredients available at an affordable price. In an effort to create a service model that would support the fins concept and ensure guest satisfaction, the Cho brothers partnered with restaurateurs Moby Duncan and Garo Mardirossian, who had been regular guests at fins prior to becoming involved with the concept.
“The single most important component of our poke bowls is the fish – and we have gained quite a reputation and following for serving some of the best offered in a fast-casual environment,” commented Chef Peter Cho. “We were fortunate enough to have the opportunity to reach our full potential with the help of loyal customers who believe in our concept.”
fins offers an alternative to the current sushi and poke options on the dining landscape by providing a product that sets the stage for a culinary journey that places the utmost in luxury and quality side by side with attainable, vibrant flavors. Upon its reopening, fins Poke Fusion will begin utilizing a build-as-you-go format, that allows the guest to be involved in the poke creating process. Guests can opt for their choice of poke bowl, wrap or taco. Bowls come in three size options with choice of fresh fish selections, including Salmon, Tuna, Spicy Tuna, Scallops, Albacore, Shrimp, and Octopus. From there, the guest can choose from three house-made poke sauces, a rice or salad base, and more than a dozen fresh ingredients.
“Our concept is centered around delivering an unbelievable delicious dish, quickly and with consistency,” added Duncan, who has experience launching and managing a multi-restaurant franchise in Dubai and London. “We provide six signature bowls that offer our customers a starting point for their creativity, making the ordering process even easier.”
